
The Pasta Room in Los Gatos
There is a woman in the front window rolling dough at 4pm every day and I have watched her for a full twenty minutes while waiting for a table without once feeling bored. Everything on the pasta list is made that morning. I've now eaten my way through nine of the eleven dishes and I can tell you exactly which four matter.
The Pasta
This is a place that treats pasta as the main event rather than a course you get through before the protein arrives. The cacio e pepe is the benchmark dish — if a kitchen can do that with three ingredients and no cornstarch shortcuts, they can do anything. The agnolotti is the one I'd order for my last meal in the South Bay.
What to Skip
The bone marrow bucatini and the veal chop. Both are fine, both are the most expensive things on the menu, and both take up room you should be spending on a second pasta. The salad list is also unnecessary; the burrata covers that job better.
The Room & The Wine
Warm, loud in a good way, brick and candlelight, tables closer together than they should be. The wine list is all Italian and mostly under $80, which is refreshing. Ask for the Aglianico by the glass — it's the best value pour on the list.
Know Before You Go
Reservations open two weeks out and the 5:30 and 9pm slots are always the last to go. Street parking in Los Gatos on a Friday is a competitive sport; use the garage behind the theater.

Tonnarelli, finished tableside in a pecorino wheel. Glossy, not gluey — they actually know how to emulsify.

Twelve little pillows in brown butter and sage. The braise tastes like it started the day before.
- Burrata with Blistered Grapes$199.1
Sounds like a 2019 menu. Tastes better than it has any right to — the grapes go jammy and acidic.
- Wild Boar Pappardelle$348.9
Rich and a bit heavy for a warm night. Great in January, too much in June.
- Bone Marrow Bucatini$368.4
The one dish that felt like a flex. Delicious for four bites, hard work after that.
- Tiramisu$149.3
Espresso-soaked, barely sweet, served in a bowl for two. Order it even when you're full.
