Every review here comes from a meal I paid for, at a table I booked myself, on a night nobody knew I was coming.
I don't write about restaurants I only visited once unless the once was decisive. I score on food, atmosphere, service, presentation, value, and yes — how it photographs, because I'd rather admit that's a factor than pretend it isn't.

The most quietly confident cooking in the city right now. Sit at the far left seat.

Two al pastor, one suadero, extra salsa verde. That's the order. Every time.

Order the cacio e pepe and the short rib agnolotti. Split a tiramisu you don't need.

Pork and chive, boiled not fried, extra chili oil. Eat them standing up.

A dozen raw, one grilled dozen, the crab roll to split. Bring your own wine.

Sit at the far right. Say yes to the supplemental uni. Don't ask for soy sauce.

Get there before 9. Two pastries minimum. Take the loaf home.
